It's FALL Y'ALL! I don't know about you but I get really excited about Fall. Halloween, the changing leaves, my birthday (I turn 30 in days...WHAT!?), oversized sweaters, Thanksgiving, hot drinks, diffusing fall essential oils and EVERYTHING PUMPKIN AND APPLE SPICED. Fall is pretty much the season you're allowed to eat sweet things all day everyday and i'm so on board with that.

When I first became vegan I was worried I'd never really enjoy food again - or that cooking and baking would be harder. I'm so happy to have come to the realization that both of those fears have turned out to be so UNTRUE. I enjoy food more than ever and for me, the vegan lifestyle has broadened my horizons with cooking and baking.

Okay so you don't have to be Vegan or on a plant-based diet to enjoy these muffins. THEY ARE YUM! The rolled oats provide that good-for-you fiber, the applesauce replaces the eggs, the nutmeg essential oil supports your adrenals and the walnuts add that heart-healthy fat and omega-3's! Also...they're sweet so, duh! They're delish!

These are easy too. Honestly you could pre-mix everything everything the night before, store the 'dough' in a sealed metal bowl in the fridge and pop these bad boys in the oven for breakfast the next day. Your kids will be super impressed and you'll look like you have your ish together. :)

Vegan Apple Walnut Muffins Recipe

A healthy, plant-based version of your favorite fall muffins.
  • 2 peeled + chopped apples
  • 1 teaspoon cinnamon
  • 1 + 1/4 cup all purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup + 1 tablespoon brown sugar
  • 1/2 teaspoon salt
  • 2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/3 cup melted coconut oil
  • 1/2 cup applesauce
  • 1/3 cup non-dairy milk
  • 2 drops nutmeg essential oil
  • 3/4 cup walnuts
1. Peel + chop apples into 1/4 cubes. Chop walnuts.2. Preheat oven to 375F + grease muffin cups with vegan butter or line with liners. (I use non-stick muffin pans + they work perfectly without liners or being greased).3. In a small saucepan, saute the apples, 1 tablespoon brown sugar + cinnamon for about 5 minutes over medium heat or until soft and caramelized. Remove from heat + set aside.4. Stir together flour, rolled oats, brown sugar, salt, baking powder + baking soda in a mixing bowl. 5. Add in the applesauce, coconut oil, dairy free milk + nutmeg essential oil. Stir until combined. 6. Fold in cooked apple.7. Fold in walnuts + leave a bit out to top muffins with.8. Fill muffin cups ¾ full. + sprinkle walnuts on top.9. Bake in pre-heated oven for 18 mins.10. Try to let them cool before stuffing your face!
